Borsch is a beet soup popular in several Eastern European cuisines, including Russian, Ukrainian, Polish, Belarusian, Latvian, Lithuanian, Romanian, and Ashkenazi Jewish cuisines. Come and learn how to make this delicious soup from scratch with an array of winter vegetables with me. We will cook my mother’s recipe for the winter Borsch and talk about how it can be made as a cold soup for a wonderful summer alternative to the Spanish Gazpacho.
